It would be a nice touch if we could talk to them in our strongholds as well. They do, but if they have the little ship icon next to their name, it has to be the Ship. Some can be triggered in every resting area (cantina, fleet, ship, stronghold...), others have to be triggered specifically on the ship. One example for this is when the companion interacts with the ship's computer-terminal during the conversation.
