It's believed that the original reason people (on earth) even started using spices was for their antimicrobial properties. It started as a food preservative, and it was only after that people realized it could affect the flavor. So, these pre-Republic colonists must have had a similar sort of situation. Ancient civilizations put it on their food to keep it from going bad, and realized when they ate it that it tasted good.
