Yeah, I wish you could use whatever melee weapon you want on your jedi/sith, and whatever ranged weapon on the rest. It's something that surprised and slightly 'upset' me when this was confirmed back then. I'd love to be a BH with a rifle, or a guardian with a staff, whatever. Thing is though they'd have to put so much more effort into the skills and animations. Perhaps something like they did in Guild Wars 2, idk. At any rate, the advanced classes would more or less lose their importance. You might as well just not have an AC, and just have 5 skills trees for different styles/roles.

Being a sith is far more than just picking every dark side option possible imo, so do whatever the heck you please. Like others said, some people seem to think that playing empire means you're naturally evil and are required to always pick dark side. Sure sith are dark side, but that doesn't mean they have to kill the commander on the BT for example. I just think the light-dark side system is a bit silly sometimes, because sparing him doesn't suddenly make your sith a good guy. I prefer not seeing which options are light or dark myself anyway.
