Will there ever be flying mounts in star wars?

We have speeders, they sort of fly, otherwise the various taxis fly.

Your going to need to define flying.

 

In Star Wars the Old Republic we have in no particular order:

 

1.) Our Spaceships. They by definition fly. They may not be considered planetary mounts by definition, but they are mounts non the less. And they fly from system to system. And you can use them in combat.

 

2.) Various types of player controlled Speeders and other Repulsor Craft. Technically they don't fly so much as float, but the point remains.

 

3.) Automated Holographic (huh?) Air Speeders. In the Star Wars Universe it is by definition the Air Speeder that you will see flying the most often as a personal craft. However we ended up with automated versions of these.

 

If your definition however has anything to do with the system of overland flight that was popularized in a certain Perfect fantasy World, then I highly doubt that will ever happen, seeing as how that generally utilized Arcane Magic, Kites, and or actual wings sprouting out of a characters back. Closest your going to come to that is the Bounty Hunters Jet Pack.
