Actually, I've been having this same issue. Already did a few companion conversations on the ship, but now every now and then it pops up a message saying my companion wants to speak....but it disappears a little bit later. No idea what's going on there.

The easiest way? Get a friend to help.

You might only see a lot of low level players because most people are making alts, playing with different classes, and the game has only really been out for a day. I've been playing quite a bit, and even my main is only up to level 27 so far. That said, really do wish people would stop comparing things to WoW.

Really does need to be a cap on that skill respec. I've already done it a couple times where I went and specced into my healing tree so my guildmates could run a flashpoint without searching for a PUG healer. Even dual specs won't completely solve this, because one might decide to play around with a few different setups before settling on what they like. If Bioware is going to maintain that respeccing is supposed to be very prohibitive, then at least make it have a diminishing cost over time. So respeccing several times in one day gets very expensive, but respeccing once a week is relatively cheap.

I'm wondering how all these new servers work with imported guilds. Guessing they're just assuming solo players will head to the new servers? I wonder what the ratio is between guilded and unguilded players.

I don't think it's available yet. The security key page still says it's "Coming Soon". Quick search on the App Store turned up nothing too.
