I've rolled sentinel and guardian and based on pvp experiences I wouldn't give up on the sentinel yet. You can have Rebuke active more than half the time when Riposte is talented to reduce its CD which seems to make for for medium armour as well as providing a slight damage increase due to its counter-attacking effect. And while your sweeps may not be hitting as big, remember that all your saber swings are hitting bigger due to off-hand strikes. While these may not be huge (can be talented in 1st tear combat for an extra 36%) it still adds up. I also found the sentinel had more focus due to Zealous Strike being on a 15 sec CD while the guardian has to wait a minute for 6 free focus. In saying this I found that Watchman, if specced right and with liberal use of Zen, to be more effective in pvp. You won't see as many big numbers but you'll see a lot more numbers (that also ignore armour). Remember as a sentinel to use your healing debuff which against a class using heals or anyone being healed is effectively a damage increase in pvp. Hope this is helpful.
