SteveTheCynic
Lots of things, at least: It raises restrictions on how many credits your characters can carry at any one time, from one million credits (per character) to 4294967295 (4.29 billion) per character. It allows three crew skill slots It allows you to queue up to five items to be crafted by your companions instead of just the one item that's in production. It unlocks access to expansion content beginning with Knights of the Fallen Empire(1). It unlocks access to levels above 60.(1) It allows access to guild bank contents (also available with a Cartel Market unlock). It allows access to guild bank credits (only available with a subscription). It allows access to certain mission rewards that are shown behind a Cartel Coin symbol (and not given) for non-subscribers. It allows you to use the more powerful quality tiers of gear. (also available with a hugely expensive Cartel Market unlock). It gives you 500-600 Cartel Coins each 30 days, depending on the subscription package you paid for. It gives you access to Speeder Piloting training at lower levels than if you are not a subscriber. As for levelling up faster, that affects characters above level 20, by giving them +25% on earned XP compared to non-subscribers. (1) Unlike most of the other things, you keep what you unlocked when you let the subscription end, but if either more expansion content or higher level ranges is released while you are not a subscriber, you don't get access to them until you subscribe again.
