So.. why did the Sith show themselves?

I didn't read the books people are talking about, but I think that there is a reasonable explanation by just watching the movies.

Palpaltine tried to set himself up with win/win situations.

Jedi are sent to remove the blockade of Naboo; a blockade that Palpaltine himself set up. Sic Darth Maul on them and distract them from the real plot. If Maul is successful in his mission, some powerful Jedi are killed, and the Jedi Council are in shock and disarry. If he dies, he dies. Maul dies, kills a powerful jedi, and distracts the council enough so Palpatine in made Chancellor. A win/win.

Attack of the Clones starts up with Amadalla almost being assinated. If she dies, its a win. If she lives, it's an excuse to manipulate her off the planet with Anny (whom he's been palling around with since he was a kid). At this point he could speculate that an investigation will reveal the clone army, while his true apprentice Dukoo winds up the war with the seperatists. Think about it, even if there isn't an investigation, Jar-Jar has already called for emergency powers of Palpatine, and he has an army ready. Again the Jedi council is still confused and in disarray. Again, a win/win.

The best example of this is when he had himself kidnapped, and Anakin killed Dukoo. If he isn't rescued, it's a win as the Republic is further weakened, adn if he does, he leads Anakin further down towards the Darkside. ( It's safe to say that it was obvious that Anakin and Obi-wan would lead the rescue effort, IMHO) Again, a win/win.
