sharpshooter or sabeteur for pvp?

Imo Sharpshooter is in a playstyle category all to itself. Sab is more like dirty fighting, and when it comes between the two, Dirty Fighting is better than Sab for PvP.

I'd say sharpshooter is just as good, but in a very different way. Go sharpshooter is you like turreting and doing massive burst, and go Sab (or DF imo), if you like mobility and survivability.

All the trees do comparable damage, so don't think that Sab or DF dmg is lower than Sharpshooter. SS just has good frontloaded damage that requires no set up of DoTs prior to bursting.

No, but does require setup of cover.

In my opinion mobility is key for pvp, and with all current warzones being objective based, dots and aoe are much more valuable in many cases than burst damage. My favorite build right now is Dirty Fighting because it has the least reliance on cover (meaning more mobility) and the best aoe/dot's. When you really need it you can do some really nasty burst damage, but it requires you to set up multiple dots on the target first so its not always reliable. For maps like Civil War (turrets) and Voidstar (laying bombs / defending), dots and aoe's are incredibly effective, and your survivability from the extra slows and speed boosts you get I think are more useful than what you get in the other trees.

That said, experiment and play whatever you think is fun. I did play Sharpshooter tree for quite a while and I enjoyed the heavy burst and big numbers you get from it, but I play with a group of friends who have other classes that are much more effective at burst, so I find I'm more useful in the team as an objective defense specialist.

Sab is not a mobility spec...

I prefer sab to sharpshooter because it holds up better against melee focus fire.

Best way to describe the differences are that sharpshooter is a sniper with consistent burst. Sab is a mobile turret that relies on 30 second cooldowns and should be setting up into cover at least once every 15-30 seconds. Dirty fighting is a run and gun spec.

Where sab gets its impression of mobility from is it is long-cooldown dependent, so will have more time to reposition in between its big attacks. But you need to seek cover often.
