If you notice most if not all the full servers are ones that were launched from the beginning of EGA. By day #3 of EGA there were full servers in the evening and by last Friday all were full. I think the issue is how they rolled out the initial server base. If they would have launched all the servers and spread guilds out a little further I think you would have found a more diverse population across all servers. Yes it would have been sparse for the week of early access but it would have been more beneficial for the long term. I think it'll eventually work itself out with the help of some free character/guild transfers off of high pop servers. I don't think BW anticipated this many people rolling with friends already on high pop servers. I already have a level 22 SW and don't desire one bit to reroll it. But it is the first day of the official launch -- I think many people are used to playing an MMO thats been around for some time and may not have experience a launch of a major MMO. But from what I have experienced thus far -- BW will make it right and find an agreeable solution.
