I'm having the same issue exactly. I can't see the point now to have leveled up my artifice to 500 if there isn't a single option to craft color cristals for lightsabers. All craftables lightsabers are coming with Yellow/Orange cristals (those can't even be removed or changed - not that it matter tho, since we can't craft any others). This is pretty weak honestly.
