I personally liked the Jedi Knight storyline (to 30), and the Sith Warrior storyline (to 50). The Sith Inquisitor storyline gets better closer to 50. I can't give my opinion on the Jedi Consular storyline, since I haven't seen enough of it to pass judgement.
