I found my answer about that today. I wish there's an NPC or a new class that introduce this. They may still carry their lightsaber but only use it for a channeling animation purposes only, ie a two second of unarmed melee attacks combo that ended with a slash from the lightsaber, and the saber is back again to his side pocket continuing with his unarmed mode again.
