They are, in real life, paper targets with different images on them to practice shooting at. Why not have a droid by the training dummy sell silhouettes of the ops bosses for the ops dummy. You could practice your dps on Kephess, Operator 9, SOA etc. Would look much cooler practicing taking them out than the standard dummy look.
