So the real first issue would be - What defines a 'Mandalorian' in the New Canon? Until there's a clear answer one way or the other, I see no reason to adjust the Legends version. From what we've seen so far, the most likely answer is that "Mandalorian" refers to the human population of the planet Mandalore and it's territories, as seen in the Clone Wars episodes - every member of both the Death Watch and Satine's Hippie!Mandos we've seen seems to be human. They may not have an absolute rule that no non-human, non-native can be a part of their society (Maul seems to be treated as Mandalore, whether or not he holds the official title) but they also don't seem to be widely / regularly assimilating others into that society either.
