If the button on the left of the recipe is grey you cannot skill up anymore on that and need to see the trainer and learn new recipes. then you can skill up more. Missions, mobs, crafts ect... once it goes grey, it won't produce rewards, like missions will give you 5xp, mobs give 1 I think, and crafts won't skillup past a certian level until you start tougher crafts. I cannot buy anything from the trainer because nothing is for sale with him except the advanced pack at level 400. I have schematics for things at level 100 but stuck at 60... I have schematics for things at level 100 but stuck at 60... Look at the color of the dot on the right side of the schematic name. Unless it is green, yellow, or orange, you won't gain any levels by crafting it. Orange will give you the best level boost, yellow second best, green the least.
