I did a brief search and couldn't find any Polish guilds, but there are definitely Jedi guilds and if nothing else, people can point you in the right direction if you ask around. I'm pretty sure I stumbled across some Polish RP on Voss (although I don't speak it, so didn't know what they were roleplaying or if it indeed was in Polish), once, so I imagine there's something out there.
