Sentinel Specs

I played Combat Spec. I think its a lot of fun. Some say it has more of an 'authentic' jedi feel to it because its mostly lightsaber attacks that you use. With Watchman you are focused on DoT's. The Focus tree is more of an AOE tree. It looks fun to try, but I've never done it.

Recommending Sentinels specs is like recommending a good wine. It all depends on what you want to do. Watchman have nice DOT burns and survivability abilities, great for dealing with bosses. Combat has nice burst, great for cleaning up the trash. Focus has some great AOE abilities.

Combat & Focus bloom pretty late so I would use Watchman until level 40. At that point I would use Focus until level 50 since it is primarily AoE damage (perfect for mobs).

End game is up to you. All 3 specs are amazing. I switch between them frequently which leaves me broke. :(

For leveling, go watchman. I switched back and forth between watchman and combat, and watchman was definitely easier. You get self healing from brun crits, which is helpful all the time; but as an added bonus , you get a guaranteed 12% max HP every time you pop Zen. What's not to like?

Plus, it's fun to burn stuff.

I personally did not enjoy Combat, but it is a personal thing. I felt too dependent on procs and I prefer more mobility, which both other specs do better. Watchman is my favorite by far because I love the interrupts (reduced CDs on Leap and Kick) as well as the Zen healing, which heals not only you but your entire team. That's pretty significant, especially in PvP and raid bosses. As mentioned, Focus is amazing AoE damage but blooms really late, as in 35-40 late. I say AoE, but the single target damage is still good on your AoEs just because Force Sweep will hit like a train. The fact that it is AoE is only a liability if you are facing an enemy with CCed enemies nearby. Usually not an issue, but keep it in mind.

Watchman has good sustained damage, self heals, a Max HP buff, and when you pop Zen with OS and cauterize on a target...good burst. It is easy to solo or team and probably the sturdiest of the 3. I love playing watchman...plus it is a bit more involved priority of attacks, so you rarely have downtime between big hits like other specs.
