So my default UI used to look like this

I decided to mess around with the customization, when i tried to switch it back to the default it looks like this now

Your "before" picture looks like the pre-patch 1.2 default with the bottom toolbar expanded. The closest preset UI to this right now is Extended Toolbars.

 

I only wanted the bottom two and the right side bar, so once I applied Extended in the UI editor, I moused over to the outline for the left-hand quickbar, selected it, and un-checked "Enabled" in the properties pane of the center control window. I also found it useful to use Global Scale to shrink the entire Extended Toolbars UI down, since the elements seemed oddly large.

 

If you get something you like, be sure to save it with some handy name. Once it's saved you can call it up and apply it for any character on any server.
