1. At what level do they start becoming grey? +8 levels from start? I checked the Net but amazingly enough I couldn't get a definitive answer on this one...

2. Grey mobs still drop loot and credits right? Do they drop green loot? Are the drops affected in any way?

3. Do you get normal quest XP from completing a grey quest, or do you get less? If so, how much less?

4. Is there any level where mobs stop attacking you because you are so much higher levelled than them? (kinda irritating being knocked off my speeder in lower levelled areas)

think there is a 5 lvl leway each side, 5 lvls up red, 5 lvls lower grey. For the drops then yes they will still drop cash and gear relevent to the mobs lvl not yours. also they arnt restricted to green only, you can get loot right upto pruple colour from grey mobs but they will be relevent to the lvl of the mob.

for completing a grey quest you get 5xp or so i have found but this doesnt make grey quests not useful as the orange rewards from quests still are avilable as rewards meaning that the gear can still be relevant if you after orange gear for looks.

Five levels, I think. I cannot be certain.

Drops don't seem to be affected. I still get the occasional green or blue. Heck, Oranges still drop in FP's if you're over level.

If it's grey, you'll get 5xp.

They're less likely to aggro if you're way higher, and probably won't turn on you unless you run right on top of them or dilly dally near them too long.
