There wasn't a demo, there was just the quest. But nowdays there could be made into mission/demo of selected proficiency. Then at the end of the quest you decide what you want to select for the rest of your gameplay.

I have a suggestion for this new combat style update. Remember back in the day when you get to the fleet for the first time and pick up the quest to chose your discipline, there was a fully voice acted quest line where you get some kind of demonstration which subclass you could choose? Maybe you could recycle that into a mini quest where you talk to those guys and you can try out all the classes before choosing? I think that would be very helpful.
