It's easier to assume that all missions have a bonus objective of "kill 30 dudes" I certainly prefer it to the old system of running back and forth to kill the guys, then having to get back to the quest giver only to be told to get back there and kill the slightly larger guy.

Every attack that is launched at you has a chance to be deflected. It's automatically calculated based on your stats and level. There's no way to control it manually.

Right clicking on a target activates hotbar slot 1. Remap your basic attack to hotbar 1 and your problem should be solved.
